Life You Love Emily

One of my favorite days of the year. Cookie day with my mom/Caroline’s Gammie. We missed it last year and that made this cookie day even more special. We always make Buckeyes (peanut butter balls), Gingerbread Cookies, Iced Sugar Cookies and this year Christmas Monster Cookies. Anyone else obsessed with the recipes from Tieghan Gerard, the Half-Baked Harvest? Her recipes are unique, easy to follow and her blog always leaves me hungry.

Cut out sugar cookies have always been part of our holiday cookie tray, for as long as I can remember. A few years ago my girlfriend Nicole shared her recipe and it has become our families favorite. This dough can be made ahead and frozen to use later.

Nicole’s Sugar Cookies–  Mix 1 cup oil, 1 cup butter melted, 2 cups sugar, 4 eggs, 2 tsp vanilla, 2 tsp baking powder, 2 tsp salt and 5 cups flour. Cool dough in fridge before rolling out and cutting out shapes. Then cook at 395 degrees 7-8 minutes. 

We tried a new frosting recipe this year and loved it! Tastes wonderful, is shiny and dries. I think the secret ingredient is the corn syrup.

Sugar Cookie Icing– 2 tsp. lite corn syrup, 1/4 tsp. almond extract, 1 cup confectioners sugar, 2 tsp milk. Mix well, add food coloring as wanted.
